Tea-Infused Pomegranate Celebration Cocktail
Get ready to celebrate with a fun and festive Pomegranate Celebration Cocktail! Our new favorite way to toast friends and loved ones is a blend of gin, tea, and winter-time fruits, with chilled Prosecco floated on the top for a bubbly finish. It's both sweet and tart, with hints of blueberry and pomegranate and herbal pops of rosemary, juniper, and lavender.

We'll start out by making a tea-infused simple syrup, which can be prepared several days ahead of time. To do this, we'll make a strong tea using our herbaceous Meadow Walk herbal blend (which will be the perfect companion to the gin as well as bring out the blueberry flavors in the juice). To make the syrup sweet, we'll mix in sugar equal to the amount of water we used for the tea. Yup, it's really that simple!
Next, we'll shake up the simple syrup with gin, ice, and tart pomegranate-blueberry juice until it's nice and frothy. After straining the liquid into a glass, top with light and sweet Prosecco -- or your favorite sparkling wine -- before garnishing with a spring of rosemary and serving to your guests.
For anyone who needs a mocktail version, simply eliminate the gin, add another ounce of pomegranate-blueberry juice, and top with club soda instead of champagne.
You can make these cocktails one at a time, or whip up a large batch all at once to divide amongst glasses; just wait to add the Prosecco until right before serving. Cheers!


Tea Simple Syrup


Ingredients:

Directions:
Boil water in a small saucepan, then remove from heat. Using a tea ball or filter bags, add tea to boiled water; cover and steep for 10-15 minutes.
Remove tea and set saucepan over high heat. Bring to a boil, then whisk in sugar until dissolved.
Remove from heat and allow to cool before bottling or using. Can be stored in the fridge for up to a week.



Pomegranate Celebration Fizz


Ingredients:
  • 1 oz gin
  • 1 oz POM Wonderful pomegranate blueberry juice
  • 1/2 oz tea simple syrup
  • ice
  • 2 oz chilled Prosecco
  • rosemary springs, for garnish

Directions:
Place all ingredients except for Prosecco into a cocktail shaker; shake well until blended.
Strain into glass, then top with Prosecco. Garnish with rosemary.
