There's something to be said for the satisfaction of enjoying a hot snack, whether that's a midday treat or welcoming your dinner guests.
One of my favorites is arancini -- Italian rice balls. They're full of flavor and filling, and honestly not as hard to make as you'd think.
Recently, I found that Minute® Rice has a new gluten-free treat, a rice/quinoa medley that is quick, easy, and really yummy. Here's what it looks like:
I couldn't help but think that a rich, flavorful gluten free rice would make some lovely gluten-free arancini!
This recipe is super simple and you can prep the balls earlier in the day and just pop them in the oven when ready. You might want to be prepared to make a second batch -- there will not be any leftovers!
Party Rice Balls
Ingredients:
- 1 bag Minute® Rice Multi-Grain Medley
- 1 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, grated
- 1 teaspoon butter
- 1 teaspoon fresh parsley, diced
- 1 egg, beaten
- 1/4 cup grated Parmesan, plus extra for topping
- 1/4 cup gluten-free breadcrumbs
- Pinch salt & pepper, to taste
Preparation:
Preheat oven to 400F.
To prepare the rice, put the water, salt, pepper, garlic, and butter into a pot. Bring liquid to boil, add the rice and lower heat. Simmer for 10 minutes. Once complete, allow to cool.
Stir the egg, Parmesan, and 2/3 of breadcrumbs into the cooled rice mixture. Shape the mix into 12-15 balls.
Put the remaining breadcrumbs in a shallow bowl. Roll balls in the breadcrumbs and then place on a parchment-lined baking sheet.
Bake balls 15-20 minutes until crisp. For the extra cheesy version, take balls out of oven and add a thin piece of Parmesan on top and place back in oven for 3-4 minutes.
