Cinnamon Chip Scone Sticks Recipe
Scones sticks are a recent discovery around here, and we are basically obsessed. They are a kind of cross between scones and biscotti, meaning that they are dry yet soft -- and perfect for dunking! This, of course, makes them a fabulous accompaniment to all of our teas. We think these cinnamon chip scone sticks are just the right thing to get you hooked, too.

Scone sticks are just as easy to make as nearly any other scone, there are just a few slight changes. For one, we added yogurt into the batter. The yogurt gives the scone sticks a more doughy texture, reducing the crumb and making the sticks more dip-able; they are less likely to disintegrate when coming into contact with liquids. Additionally, the baking temperature is a little different than most scone recipes, and obviously the shape is different.
Scones typically come in one of two shapes; the standard US shape is a triangle, while the standard British shape is a circle. Here, the general shape is a stick, so the dough is cut into strips. One of the cool things about making scone sticks as opposed to biscotti is that they don't have to be baked twice; making this recipe is infinitely easier.
Feel free to use this cinnamon chip scones recipe as a guide for creating a number of scone stick recipes. Simply swap out the chocolate chips for dried fruit or nuts, and the cinnamon for other spices and herbs. Add a glaze or chocolate dip for a little added fun. Really, the sky is the limit on flavor changes and additions for this one.

The hint of cinnamon in this recipe does lend itself to a lovely fall tea menu. Try incorporating our caramelized carrot and sweet potato soup, the deluxe apple slaw sandwich, and pear brie bites.
Tea pairings for these scones sticks are quite versatile. Nearly any of your favorite teas are bound to go well, but we of course do have a few suggestions. Our Autumn Almond Chai or Full Moon vanilla chai tea with butternut are the perfect complement to the cinnamon in the scones. When served traditionally with milk and sugar, chai is a fabulous treat to dip the scone sticks into, and a decadent combination your teatime guests will love.

Before we move on to the recipe, we want to warn you that any leftover scone sticks -- should there actually be any that survive more than a few hours -- really should be stored in an air-tight container at room temperature, otherwise they will harden up overnight.


Cinnamon Chip Scone Sticks



Ingredients:
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon salt
  • 1/4 cup plain yogurt, low-fat
  • 2/3 cup milk
  • 1/2 teaspoon ground cinnamon, plus more for garnish
  • 1/2 cup semi-sweet chocolate chips

Directions:
Preheat the oven to 450 degrees.
In a large bowl, sift together the flour, baking powder, and salt.
Stir in the yogurt, milk, and cinnamon until a dough forms.
Gently fold in the chocolate chips.
Transfer the dough to a piece of parchment or lightly-greased work surface (a floured surface will only dry out the dough more). Flatten the dough into a rectangle about 1/2 or 3/4 of an inch thick. Using a butter knife or pizza cutter, cut the dough into strips. Garnish with a few sprinkles of cinnamon on top.
Place in the oven and bake for 18 to 20 minutes, or until the tops are a medium golden brown.
Remove from heat and serve.
