Everything-is-All-Right Cheddar Corn "Quiche"
There's just something about a good quiche that makes me feel like all is right with the world. It's hard to find good ones; in my experience, you can buy them in a cafe or in the supermarket and they're hit or miss. Making them can also be hit or miss!
If you're going to serve quiche at your next brunch (or brunch-themed dinner party), consider mixing it up beyond your typical flavors.

Today we're featuring this "quiche" recipe that is similar to a quiche (the original author calls it a pie), but easy to make. This recipe uses cheddar and corn for great, fresh flavors. Pair it with some rainbow slaw and boom: you're the hostess with the mostess.

Cheddar-Corn Quiche

Makes 4 servings.


  • 2 tablespoons dry bread crumbs
  • 10 slices bacon, cooked and crumbled
  • 1 cup shredded mild cheddar cheese
  • 1 onion, finely chopped
  • half a sweet green pepper, diced
  • 1 cup corn kernels
  • 1/4 teaspoon pepper
  • pinch salt
  • pinch cayenne pepper
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoon shortening
  • 4 eggs
  • 2 cups milk

Grease 10-inch quiche pan or pie plate; sprinkle with bread crumbs. Combine bacon, cheddar, onion, green pepper, corn, pepper, salt, and cayenne; sprinkle over bread crumbs.
In bowl, stir together flour and baking powder; cut in shortening until in fine crumbs. Add eggs and milk; whisk just until smooth. Pour over bacon mixture.
Bake in 350°F oven for 45 to 50 minutes or until knife inserted near center comes out clean.

Let stand for 5 minutes before serving.
