Arugula + Walnut Pasta Picnic Salad

  • 1 (16 oz) package bite size pasta
  • 2 small garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Pinch of salt
  • 1 red pepper, cut into 1-inch pieces
  • 1 (8 oz) package mozzarella balls
  • 1/2 cup chopped walnuts
  • 2 cups loosely packed baby arugula

Prepare the pasta according to package instructions. Allow to cool.
In a large bowl combine the garlic, oregano, olive oil, lemon juice, and salt. Stir well.
Add the cooled pasta, pepper, mozzarella, walnuts, and arugula to the bowl. Toss well to coat, then serve.
