Fresh + Fruity Tea Sandwich Recipes -- Plus Perfect Tea Pairings
Who doesn’t love tea sandwiches? They’re perfectly sized for mess-free nibbling, and they’re just fun to eat. Most tea sandwich recipes focus on savory ingredients, like egg salad, but let’s not forget the sweet! Any time you have a bounty of fresh fruit that is just dying to join you at tea time is a good time to consider this this trio of easy fruit tea sandwiches will be tea’s co-star at your next gathering.

Get Fruity With It


Fresh strawberries burst with sweetness against the earthiness of brie in Berries + Brie Sandwiches. Serve them with a hot or iced Royale Black Tea to make the flavors really pop, or combine them with a cup of Vista Blend for a hint of lavender and fruit.
“Lemoncumber” (lemon and cucumber) Sandwiches are a refreshing nibble for any afternoon tea time. Traditionally slathered on scones, lemon curd is extra remarkable when layered with cucumbers and a hint of mint leaves. These sammies are perfect with the lemony notes of Inner Calm Green Tea or the elderflower and rose in an iced version of Evening In the Garden herbal tea.

Assemble the Main Players


These adorable little sandwiches may sound complicated, but they’re quite simple to make; the hardest part is gathering and prepping your ingredients (and that’s not too hard, don’t worry). All of these fruit tea sandwiches are vegetarian friendly and can easily be made gluten free by changing up the kind of bread you use.
“Thin” is the key word here; cut everything thinly! If your cuts are too thick, the sandwiches won’t have as much flavor balance, and they’ll also have a hard time staying together. Plus, let’s all just agree that tinier equals cuter. Cut the crusts off the bread if you want; save them for croutons or bread pudding.


Berries + Brie Sandwiches



Ingredients:
  • 1 cup fresh strawberries
  • 2 tablespoons honey
  • Favorite brie or camembert
  • 8 slices of bread

Directions:
Wash strawberries and remove green tops. Slice thinly, lengthwise. Slice brie into thin wedges.
Layer cheese, then strawberries, on half the slices of bread. Drizzle with honey and top with remaining slices of bread. Cut sandwiches in half and serve.



Lemoncumber Mint Sandwiches



Ingredients:
  • 1 small English cucumber
  • Lemon curd
  • 1 bunch fresh mint leaves
  • 8 slices bread

Directions:
Wash and thinly slice the cucumber; pat dry. Remove mint leaves from stems.
Spread half the bread slices with lemon curd. Layer mint leaves, then cucumbers, and top with remaining slices of bread. Cut sandwiches in half and serve.



Honeyed Asian Pear Sandwiches



Ingredients:
  • 1 Asian pear
  • block of cheddar cheese
  • 2 tablespoons honey
  • 1/4 cup slivered almonds
  • 1 teaspoon cardamom, ground
  • 8 slices bread

Directions:
Wash pear and cut in half, removing core and seeds. Slice thinly.
Thinly slice cheddar cheese.
Layer cheese, then pears, on half the slices of the bread. Drizzle with honey and a sprinkle of cardamom, then top with slivered almonds and remaining bread slices. Cut sandwiches in half and serve.
