Apples and Blue Cheese Sweet Potato Bites
Looking for something a little different to serve for your next party? Why not try these sweet potato bites with apples and blue cheese? They come together quickly and are packed with flavor. These savory little bites will go a long way to livening up your usual spread.

Starting with sweet potato chips as the base makes these bites a healthy appetizer. Of course, it’s always an option to buy the chips, which saves time and effort, but you can also make your own. There are a few ways to make sweet potato chips. One method is to slice the potatoes thin with a mandolin, vegetable peeler, or a knife, then dehydrate them. Another option is to bake them. Again, slice the sweet potato thin, and then toss with olive oil and bake at 250 degrees for about 2 hours to get them good and crisp.
Once you have your chip base for these sweet potato bites, layer on some freshly sliced apple, with blue cheese and a drizzle of something sweet. The apple adds a note of sweet freshness that combines perfectly with all the other ingredients and is so necessary. Meanwhile, the blue cheese brings flavor and ties it all in. If you aren’t a huge fan of the blue cheese funk, you can always use a nice goat cheese. However, we really feel that the apple and blue cheese combination is where it’s at. Adding a little something sweet gives another dimension of flavor and also helps to tone down the blue cheese, which can easily take over the bite. Either honey or maple syrup work well here.

The cool thing about these sweet potato bites with apples and blue cheese it that they are a perfect companion for either a brunch or dinner menu. For a dinner party menu, serve these with sweet and spicy corn dip and tea brined wings. Apples and Blue Cheese Sweet Potato Bites



Ingredients:
  • 20 large sweet potato chips
  • 1-2 apples cut into thin wedges
  • 2 ounces crumbled blue cheese
  • Honey or maple syrup for drizzle

Directions:
Preheat the oven to 425 degrees.
Assemble the bites by placing one apple slice on each sweet potato chip. Add a pinch of blue cheese crumbles, and a drizzle of maple syrup or honey. Place each chip on a baking sheet.
Place in the oven and bake for 6 to 8 minutes or until the blue cheese has melted slightly.
Remove from heat and serve.
