There are a few ways to make sweet potato chips. One method is to slice the potatoes thin with a mandolin, vegetable peeler, or a knife, then dehydrate them. Another option is to bake them. Again, slice the sweet potato thin, and then toss with olive oil and bake at 250 degrees for about 2 hours to get them good and crisp.

Apples and Blue Cheese Sweet Potato Bites
- 20 large sweet potato chips
- 1-2 apples cut into thin wedges
- 2 ounces crumbled blue cheese
- Honey or maple syrup for drizzle
Preheat the oven to 425 degrees.
Assemble the bites by placing one apple slice on each sweet potato chip. Add a pinch of blue cheese crumbles, and a drizzle of maple syrup or honey. Place each chip on a baking sheet.
Place in the oven and bake for 6 to 8 minutes or until the blue cheese has melted slightly.
Remove from heat and serve.
