Almond Crusted Cauliflower Bites
Now that the Plum Deluxe staff addiction to almonds is out in the open (see the almond crusted sweet potato fries recipe for the scoop), we can get back to business with putting almonds in everything.
What's the perfect thing to pair almonds with? Yes, we know, sugar and spice. But how about veggies? They can add a nice crunch and deliver a punch of protein to boot.
A veggie that could use a nutty almond pairing is the underloved cauliflower. Specifically, Almond Crusted Cauliflower Bites -- the gourmet veggie recipe of gourmet veggie recipes! No matter how you pronounce it (hint hint), this recipe makes a superb side dish when entertaining guests (along with maybe one of our favorite chicken dishes), but stands on its own if needed. And this is so easy to make! Prep is quick and easy.


Almond-Crusted Cauliflower Bites



Ingredients:

  • 3 cups cauliflower florets
  • 2 eggs, whisked
  • 1/2 cup Blue Diamond Smokehouse Almonds, finely chopped
  • 1/4 cup whole wheat panko breadcrumbs

Preparation:


Preheat the oven to 400F.
Whisk together the eggs in a small bowl to create an egg wash. In a separate bowl, combine the Blue Diamond Smokehouse Almonds with the whole wheat panko breadcrumbs.
Dip each cauliflower floret in the egg wash, then coat with the almond mixture. Place on a baking sheet and bake in the oven for 15-20 minutes, until cauliflower florets are fork tender and almond coating is golden brown.
Enjoy while still warm.
